  • 1/2 cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 3 cloves garlic, minced
  • 1 cup dry red wine (Cabernet Sauvignon, Chianti, or Merlot)
  • 1 can (14 oz) diced tomatoes
  • 1 1/2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 bay leaf

Cooking Instructions

Step 1: Prep the Beef Shanks
