Yes. The Ribeyes are cut to 12 oz. and the New York Strips are cut to 10 oz. This reflects the typical steakhouse portion for each cut, with the richer ribeye being slightly larger.

For a perfect steakhouse sear, preheat a cast-iron skillet over high heat. Pat the steaks completely dry, season generously with the included rub, and sear for 2–4 minutes per side until a deep brown crust forms. Use a meat thermometer and aim for 135°F for a perfect medium-rare.
