How to Cook It
NY Strip & Sirloin: Bring to room temperature for 30 minutes. Season generously. Sear in a cast-iron skillet or on a hot grill for 3–4 minutes per side. Rest 5 minutes before serving. Target 130–135°F for medium-rare.
Sockeye Salmon: Pat dry and season with salt and lemon. Sear skin-side down in a hot pan for 3–4 minutes, flip for 1–2 minutes more. Target 125–130°F for moist, silky results.
Cod Loin: Season lightly. Bake at 400°F for 12–15 minutes or pan-sear 3–4 minutes per side. Target 145°F internal temperature.
