How to Cook Wild-Caught Sockeye Salmon

Thaw overnight in the refrigerator and pat completely dry before cooking. For pan-searing with crispy skin: heat cast iron over medium-high with avocado oil until shimmering. Season flesh side generously with salt and pepper. Place skin-side down and press gently with a spatula for 30 seconds to prevent curling. Cook skin-side down for 4–5 minutes without moving — the skin will crisp and release cleanly. Flip and cook 1–2 minutes more until just opaque. For baking: roast at 400°F for 10–12 minutes — internal temperature of 125–130°F for medium (slightly translucent in the center) or 145°F for fully cooked. For grilling: oil the grates well, skin-side down over medium-high heat for 4–5 minutes, flip once and cook 1–2 minutes more.
