How to Cook Grass-Fed Ground Beef
Because grass-fed beef is leaner than conventional grain-fed beef, cook over medium rather than high heat to prevent drying out. For burgers: form loosely without overworking the meat, season only the outside, and cook over medium-high heat for 3–4 minutes per side — do not press down with a spatula. For smash burgers: cook on a screaming hot flat top or cast iron, press firmly immediately after placing, and cook 2 minutes per side. For tacos and pasta sauces: brown in a skillet over medium heat, breaking into small pieces, and drain minimally — the fat carries the flavor.
