Directions
1. Begin by seasoning the steak. About 30 minutes before grilling, take the steaks out of the fridge and season both sides with kosher or coarse salt. Let them sit at room temperature.
2. Preheat your grill to high heat, aiming for around 900 degrees F on the grates.
3. Prepare the compound butter by combining all the ingredients in a small bowl. Spoon the butter directly onto the serving platter underneath, where the steak will be placed.
4. Place the seasoned steaks directly on the grill grates, positioning them diagonally. For medium-rare, grill each side for 2-3 minutes, then rotate them 45 degrees for those signature grill marks. Flip the steaks and repeat on the other side. Adjust the grilling time according to your preferred doneness.
5. Once grilled, remove the steaks from the heat and transfer them to the buttered serving platter. Allow them to rest for 8–10 minutes.
6. Before serving, slice the steaks and sprinkle them with black pepper for an added kick of flavor. Enjoy the simple yet delicious taste of perfectly grilled New York strip steak!
