How to Cook It

NY Strip & Sirloin: Bring to room temperature for 30 minutes. Season with salt and pepper. Sear in a cast-iron skillet or on a hot grill for 3–4 minutes per side. Rest for 5 minutes before serving. Target internal temperature: 130–135°F for medium-rare.

Sockeye Salmon: Pat dry. Season with olive oil, salt, and lemon. Sear skin-side down in a hot pan for 3–4 minutes. Flip and cook 1–2 minutes more. Target internal temperature: 125–130°F.

Cod Loin: Season lightly. Bake at 400°F for 12–15 minutes or pan-sear for 3–4 minutes per side. Target internal temperature: 145°F.
