How to Cook Bavette Steak
The Bavette is best cooked quickly over high, dry heat. Marinate for at least 30 minutes (or up to 4 hours) before cooking. Preheat a grill or cast-iron skillet until it's very hot. Sear for 2-3 minutes per side for a perfect medium-rare. Do not overcook. Let it rest for 5-10 minutes before slicing thinly against the grain.
